Sugar Cookies for Santa Recipe
by Brandi Milloy
Ingredients
5 cups all-purpose flour
1 tsp. baking powder
1/2 tsp. salt
1 3/4 cup unsalted butter, room temperature
1 3/4 cup granulated sugar
2 large eggs, room temperature
2 1/2 tsps. pure vanilla extract
1 tsp. almond extract
Directions
Into a large bowl, whisk together your dry ingredients: flour, baking powder and salt and set aside.
In a stand up mixer, cream together your butter and sugar until smooth and creamy. Add your eggs, vanilla and almond extract and beat on high until combined being sure to scrape down the sides.
Add your dry ingredients to the wet ingredients and mix on low until combined. Divide your dough into 4 equal parts. On a floured piece or parchment paper, roll out each portion until about 1/4” thick. Cover in plastic and keep in refrigerator for 2-4 hours to chill.
Cut out cookies and place in a preheated oven at 350F for about 11-12 minutes or until barely golden but still soft in the center.
To make a simple cookie frosting, mix 4 cups powdered sugar with about 1/4 cup of cream or milk (you can also use water instead). Add 2 teaspoons of vanilla or almond extract and 1/2 teaspoon of salt. Mix until smooth. If frosting is too thick, add some cream, milk or water a teaspoon at a time until desired consistency.
